- 1 cup pineapple juice
- ⅓ cup refrigerated coconut milk, NOT canned
- 1 bottle (750 ml) sparkling wine (we love this paired with Nicolas Feuillatte Réserve or Luc Belaire Rare Luxe )

- Pineapple wedges, for garnish
