That's why we have fallen head over heels for a delightful variation on the classic mimosa: Pineapple Dole Whip Mimosas. These cocktails effortlessly blend the refreshing essence of chilled pineapple juice, a velvety touch of real coconut milk, and the effervescence of sparkling wine. Prepare to be transported to a paradise of flavors with this simple yet sensational creation.

ingredients

  • 1 cup pineapple juice
  • ⅓ cup refrigerated coconut milk, NOT canned
  • 1 bottle (750 ml) sparkling wine (we love this paired with Nicolas Feuillatte Réserve  or Luc Belaire Rare Luxe )
  • Whipped topping, for garnish
  • Pineapple wedges, for garnish

instructions

  • If time permits, chill 6 champagne flutes or glasses in the freezer for 10 minutes.
  • In a mixing bowl combine pineapple juice and coconut milk; whisk until thoroughly incorporated.
  • Evenly divide the pineapple juice mixture between the six chilled glasses.
  • Pour the sparkling wine into each glass.
  • Top with whipped cream and add a pineapple wedge.
  • Serve.
