Spring is almost here and we are ready for it. Bring on the nice weather, sun and our spin on a classic Bellini! Made with the juiciest peaches and a hint of fragrant vanilla, this champagne cocktail is a celebration of sunshine in a glass. Elevate your gatherings with this refreshing twist on a classic favorite. Cheers to unforgettable moments and fantastic flavors! 

ingredients

  • 12 oz. fresh or frozen peaches
  • 2 tsp. honey
  • 1 tsp. Pure vanilla extract or freshly grated ginger
  • 1/4 tsp. orange zest (optional)
  • (750 mL) bottle of your favorite bubbles (we love this paired with Mumm's Napa Prestige or Veuve Clicquot - Yellow Label)
  • sprigs fresh mint, for serving

directions

  1. Defrost peaches (if frozen) on a plate for 1 hour in the refrigerator, or about 3 minutes on high in the microwave. Drain excess liquid and transfer to a blender.
  2. Add peaches, honey, vanilla or ginger, and orange zest (if using) to blender and blend until smooth. Taste, and add more honey if necessary.
  3. Refrigerate peach puree until cold, about 30 minutes. When ready to serve, add blended mix into a punch bowl with your favorite bottle of bubbly.
  4. Pour in a wine glass and enjoy!
